How Pitajam’s Red Pitahaya Jam is Born
Each jar of Pitajam holds a story: that of a family farm, conscious cultivation decisions, and the transformation of fresh fruit into a product made for your table. Here’s how we craft our red pitahaya jam.
Finca El Retoño: Roots and Responsible Practices
Finca El Retoño is a family farm located on the coastal highway in Ecuador. From the beginning, we have prioritized practices that respect the land and the community:
- Approximately 70% of the crop follows organic practices, minimizing agrochemicals and prioritizing natural methods.
- We reduce the use of herbicides and support local employment through manual weed control.
Why Do We Use Fruit That Is Not Exported?
A large portion of our fruit is grown for export. However, the fruit that does not qualify due to size or harvest timing is given a second chance: it is transformed into Pitajam jam. This way:
- We avoid unnecessary waste.
- We create a product with a concentrated and authentic flavor.
The Step-by-Step Production Process
- Harvesting: the fruit is picked at its optimal ripeness, ensuring freshness and flavor.
- Selection and washing: damaged fruit is discarded, and the pulp is prepared.
- Cooking: the pulp is cooked with just the right amount of sugar, preserving its natural flavor without additives.
- Preservation: ensured through hygienic processes and thermal control.
- Packing and sealing: each jar maintains its quality and flavor intact.
- Distribution: the products are labeled and ready to reach your table.
Commitment to Sustainability
At Pitajam we believe in responsible production. By making use of fruit that is not exported:
- We reduce waste in the agricultural chain.
- We generate local value and support family and community economies.
- We promote sustainable farming practices that care for the soil and the biodiversity of the farm.
